This one is for the whole family! Whether you are in a caravan park in your Bluewater Camper Trailer or camping in the Australian outback with no reception trying to keep the kids entertained, this nachos recipe is sure to be a winner. To prepare just rip off as many large pieces of foil you need to feed your family (this recipe is to feed 4), spray cooking spray to the non-shiny side and then you’re ready to start building a Mexican feast for the whole family

INGREDIENTS

1 bag corn chips

2 cups shredded chicken (you can buy this from the deli or use a rotisserie chicken)

1 sachet of Fajita seasoning

1 can diced tomatoes

1 cup black beans, drained and washed

2 1/2 cups shredded cheese

Salsa, for serving (optional)

Sour cream, for serving (optional)

Avocado/Guacamole, for serving (optional)

DIRECTIONS

Heat grill to medium-high. In a large bowl, toss together chicken, Fajita seasoning, tomatoes, and black beans. Divide tortilla chips between four large pieces of foil, then top chips with chicken mixture. Top each with cheeses, then fold to seal into packets.

Place packets on grill and cook until cheese has melted, and chicken mixture is warmed through, about 15 minutes.

Serve with salsa, avocado and sour cream (if desired)
