ONE POT CHORIZO GNOCCHI

This is the perfect dinner for the whole family! Whether you are in a caravan park in your Bluewater Camper Trailer or camping out in some of the remote Australian outback, this One Pot Chorizo Gnocchi recipe is sure to be a winner with the whole family and won’t take too long to make!

 

INGREDIENTS FOR ONE POT CHORIZO

2 Chorizo roughly chopped

2 diced capsicum

250g Cherry tomatoes

3 cloves garlic, minced

400g Gnocchi

(Optional) 1 Chilli, diced

1 ½ Tablespoons Red Wine Vinegar

1 Tablespoon cream cheese (can use cream instead)

Basil

Salt

Pepper

Parmesan

 

DIRECTIONS

Add chopped Chorizo and capsicum to pan and fry off.

Add cherry tomatoes whole and continue to cook.

Add garlic and chilli (if using) to the pan and continue to cook.

In a heatproof bowl cover your gnocchi with boiling water and soak for 10 minutes. (If you use fresh gnocchi you can skip this step and add it to the pan to fry)

Add red wine vinegar and cream cheese to the frypan and stir until combined.

Add salt and pepper to taste and then add some roughly chopped or torn basil

Drain the gnocchi and then mix it through the sauce.

Serve immediately with some parmesan on top.
